Ingredients
- 1 pound ground turkey (85% lean)
- 1 onion (medium, chopped)
- 5 carrots (medium, diced)
- 2 zucchinis (medium)
- 2 potatoes (medium, diced)
- 1 teaspoon salt
- 0.25 teaspoon black pepper (to taste)
- 0.5 teaspoon cumin
- 1.25 cup canned tomatoes (low-sodium)
- 1 teaspoon cornstarch
Instructions
- Brown ground turkey in a non-stick frying pan.
- Add onions, carrots, zucchini, potatoes, salt, pepper, and cumin.
- Sauté for about 5 minutes.
- Add tomatoes and just enough water to cover.
- Bring to a boil, then lower heat and simmer, uncovered, until vegetables are tender.
- Dissolve cornstarch in about 1 tablespoon of cold water, add to mixture, bring back to a boil until gravy thickens.
- Serve.
