  1. Brown ground turkey in a non-stick frying pan.
  2. Add onions, carrots, zucchini, potatoes, salt, pepper, and cumin.
  3. Sauté for about 5 minutes.
  4. Add tomatoes and just enough water to cover.
  5. Bring to a boil, then lower heat and simmer, uncovered, until vegetables are tender.
  6. Dissolve cornstarch in about 1 tablespoon of cold water, add to mixture, bring back to a boil until gravy thickens.
  7. Serve.
