Pesto Shrimp Linguine

  1. Cook the linguine according to package directions in a large pot of salted boiling water. Before draining, reserve 1/4 cup of the pasta water.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium-high heat. Add the shrimp, season with 1/4 teaspoon salt and 1/8 teaspoon black pepper, and cook for 2-3 minutes per side, until pink and opaque. Remove shrimp from skillet and set aside.
  3. Add the minced garlic and halved cherry tomatoes to the same skillet. Sauté for 3-4 minutes, until tomatoes start to soften.
  4. Drain the cooked linguine and add it to the skillet along with the basil pesto and reserved pasta water. Toss well to combine.
  5. Return the cooked shrimp to the skillet and gently toss to incorporate. Serve immediately.

Notes

Leftovers can be reheated gently on the stovetop with a splash of water or chicken broth to loosen the sauce.
