Peruvian Chicken & Vegetable Skewers with Cilantro-Lime Rice

  1. Marinate chicken: In a medium bowl, combine chicken cubes with 1 tablespoon olive oil, juice of 1 lime, minced garlic, ground cumin, smoked paprika, dried oregano, optional cayenne pepper, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Toss to coat and let marinate for at least 20 minutes (or up to 4 hours in the refrigerator).
  2. Cook rice: In a medium saucepan, combine 1 1/2 cups white rice and 3 cups water. Add 1/4 teaspoon salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until water is absorbed. Remove from heat and let sit covered for 5 minutes.
  3. Assemble skewers: Thread the marinated chicken, red bell pepper, yellow bell pepper, and red onion wedges onto skewers, alternating components. If using wooden skewers, soak them in water for 30 minutes prior to prevent burning.
  4. Cook skewers: Heat a grill or grill pan to medium-high heat. Lightly oil the grill grates. Grill skewers for 4-5 minutes per side, turning occasionally, until chicken is cooked through and vegetables are tender-crisp.
  5. Make black bean salad: In a small bowl, combine rinsed and drained black beans, chopped Roma tomato, chopped red onion, 1 tablespoon red wine vinegar, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Stir well.
  6. Finish cilantro-lime rice: Once rice is cooked, fluff with a fork. Stir in 1/4 cup chopped fresh cilantro and the juice of 1 lime.
  7. Serve: Serve the grilled Peruvian Chicken & Vegetable Skewers with cilantro-lime rice and black bean salad. Garnish with fresh cilantro if desired.

Notes

Chicken can be grilled in batches if your grill is small. Marinating the chicken longer will enhance the flavor.
