Peri-Peri Prawn Fry-Up with Toasted Garlic Bread

  1. Pat the prawns dry with paper towels and season with 1/4 teaspoon salt and 1/8 teaspoon black pepper. Preheat a large skillet or wok over medium-high heat. Add 1 tablespoon olive oil.
  2. Add the sliced red bell pepper and yellow bell pepper to the hot skillet. Stir-fry for 2-3 minutes, until slightly tender-crisp.
  3. Add the minced garlic and seasoned prawns to the skillet. Stir-fry for 3-4 minutes, until the prawns turn pink and are cooked through. Do not overcook.
  4. Stir in the peri-peri sauce, starting with 1 tablespoon and adding more to taste for desired heat. Toss to coat and cook for 1 minute more.
  5. While prawns are cooking, prepare the garlic bread: In a small bowl, combine softened butter and 1 minced clove of garlic. Spread evenly on one side of each bread slice. You can toast the garlic bread in a toaster oven, broiler, or pan-fry until golden and fragrant, about 2-3 minutes.
  6. Serve the peri-peri prawn fry-up immediately with the toasted garlic bread. Garnish with fresh parsley if desired.

Notes

Peri-Peri sauce can vary significantly in heat. Start with a smaller amount and add more according to your preference. Use defrosted prawns for the fastest cooking time.
