Pepper-Spiced Shrimp Skillet

  1. Pat the shrimp dry with paper towels. In a medium bowl, toss the shrimp with 1 1/2 teaspoons of chili powder, 1 teaspoon of ground cumin, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, and 1/2 teaspoon of dried oregano. Season with 1/16 teaspoon of salt and 1/8 teaspoon of black pepper.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced red bell pepper and yellow onion and sauté for 5-7 minutes until slightly softened.
  3. Add the seasoned shrimp to the skillet and cook for 3-5 minutes, stirring occasionally, until pink and cooked through.
  4. Stir in the rinsed black beans and cook for 2 minutes more to heat through.
  5. Remove from heat. Squeeze the juice from half of the lime over the skillet. Garnish with chopped fresh cilantro. Serve immediately with remaining lime wedges.

Notes

Store any leftovers in an airtight container for up to 3 days. Reheat gently on the stovetop or in the microwave.
