Peanutty Stew

Ingredients
- 1 cup instant brown rice
- 2 cup chicken broth (low-sodium)
- 1 teaspoon dehydrated onion (minced)
- 1 teaspoon garlic powder
- 0.5 teaspoon ground ginger
- 0.25 teaspoon cayenne pepper
- 1 sweet potato (medium, peeled and diced)
- 1 can tomatoes (14.5 ounces, low-sodium, not drained)
- 0.25 teaspoon salt
- 0.5 cup peanut butter (reduced-fat, creamy)
- 1.25 cup milk (fat-free)
- 3 cup baby spinach (coarsely chopped)
- 0.25 cup peanuts (chopped)
- 1 green onion (thinly sliced for garnish)
Instructions
- Combine instant brown rice, chicken broth, dehydrated onion, garlic powder, ground ginger, cayenne pepper, sweet potato, tomatoes, and salt in a soup pot.
- Bring to boil, then turn down to medium low, cover and simmer for 10 minutes.
- Stir in peanut butter and milk.
- Return to gentle simmer and cook uncovered for 5 minutes.
- Stir in baby spinach and cook until wilted, 2 to 3 minutes.
- Remove from heat.
- Ladle stew into bowls and top with peanuts and green onion, if desired.
