- 1 tablespoon olive oil
- 1 pound ground pork
- 0.5 cup yellow onion (finely diced)
- 2 clove garlic (minced)
- 0.5 teaspoon ground ginger
- 0.5 teaspoon paprika

- 1 can diced tomatoes (undrained)
- 0.5 cup chicken broth
- 0.25 cup peanut butter (creamy)
- 5 ounce fresh spinach
- 0.5 teaspoon kosher salt
- 0.25 teaspoon black pepper
- 1 cup white rice (uncooked)
- 2 cup water
- 2 tablespoon roasted peanuts (chopped, for garnish)
Instructions
- Cook the white rice according to package directions. Typically, combine 1 cup of uncooked white rice with 2 cups of water in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes until water is absorbed and rice is tender. Fluff with a fork.
- While the rice cooks, heat 1 tablespoon of olive oil in a large skillet or pot over medium-high heat. Add the ground pork and cook, breaking it up with a spoon, until browned and cooked through, about 6-7 minutes.
- Drain any excess fat from the pork. Add the finely diced yellow onion and cook for 2-3 minutes until softened. Stir in the minced garlic, ground ginger, paprika, and cayenne pepper, cooking for 1 minute until fragrant.
- Pour in the can of diced tomatoes and the chicken broth. Bring the mixture to a simmer, then stir in the creamy peanut butter until fully dissolved and the sauce is smooth. Season with 1/2 teaspoon of kosher salt and 1/4 teaspoon of black pepper.
- Add the fresh spinach to the stew, stirring until it wilts, about 1-2 minutes.
- Serve the peanut stewed ground pork and spinach over the fluffy steamed white rice. Garnish with chopped roasted peanuts if desired.
Notes
This stew has a rich, nutty flavor. You can adjust the amount of cayenne pepper to control the spice level. Leftovers reheat beautifully and are great for lunch the next day.
