Peanut Stewed Ground Pork and Spinach

  1. Cook the white rice according to package directions. Typically, combine 1 cup of uncooked white rice with 2 cups of water in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes until water is absorbed and rice is tender. Fluff with a fork.
  2. While the rice cooks, heat 1 tablespoon of olive oil in a large skillet or pot over medium-high heat. Add the ground pork and cook, breaking it up with a spoon, until browned and cooked through, about 6-7 minutes.
  3. Drain any excess fat from the pork. Add the finely diced yellow onion and cook for 2-3 minutes until softened. Stir in the minced garlic, ground ginger, paprika, and cayenne pepper, cooking for 1 minute until fragrant.
  4. Pour in the can of diced tomatoes and the chicken broth. Bring the mixture to a simmer, then stir in the creamy peanut butter until fully dissolved and the sauce is smooth. Season with 1/2 teaspoon of kosher salt and 1/4 teaspoon of black pepper.
  5. Add the fresh spinach to the stew, stirring until it wilts, about 1-2 minutes.
  6. Serve the peanut stewed ground pork and spinach over the fluffy steamed white rice. Garnish with chopped roasted peanuts if desired.

Notes

This stew has a rich, nutty flavor. You can adjust the amount of cayenne pepper to control the spice level. Leftovers reheat beautifully and are great for lunch the next day.
