Instructions

- Heat vegetable oil in a large skillet or wok over medium-high heat. Add shrimp, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Cook for 2-3 minutes per side, until pink and cooked through. Do not overcrowd the pan; cook in batches if necessary.
- To serve, arrange butter lettuce leaves, cooked shrimp, and shredded carrots on a platter. Drizzle with the peanut sauce. Allow each person to build their own lettuce wraps.
- Garnish with chopped roasted peanuts, if desired.
