  1. In a medium bowl, whisk together the chicken broth, creamy peanut butter, lime juice, soy sauce, fresh ginger, minced garlic, and optional red pepper flakes until smooth. Set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken breast pieces, season with kosher salt and black pepper, and cook for 5-7 minutes, stirring occasionally, until browned and cooked through.
  3. While the chicken cooks, prepare the couscous: Place instant couscous in a heatproof bowl, pour 1 1/2 cups boiling water over it, cover, and let sit for 5 minutes. Fluff with a fork.
  4. Reduce heat to medium-low in the skillet. Pour the peanut sauce over the chicken and simmer for 2-3 minutes, allowing the sauce to thicken slightly. Add the fresh spinach and cook until just wilted, about 1-2 minutes.
  5. Serve the peanut-lime chicken over the fluffed couscous. Garnish with chopped fresh cilantro, if desired.
