- 1 pound chicken breast (boneless, skinless, cut into 1-inch pieces)

- 0.25 teaspoon black pepper
- 0.5 cup chicken broth
- 0.25 cup creamy peanut butter
- 2 tablespoon lime juice
- 1 tablespoon soy sauce
- 1 teaspoon fresh ginger (grated)
- 2 clove garlic (minced)
- 0.25 teaspoon red pepper flakes
- 1 cup instant couscous
- 1.5 cup water (boiling)
- 5 ounce fresh spinach
- 2 tablespoon fresh cilantro (chopped)
Instructions
- In a medium bowl, whisk together the chicken broth, creamy peanut butter, lime juice, soy sauce, fresh ginger, minced garlic, and optional red pepper flakes until smooth. Set aside.
- Heat olive oil in a large skillet over medium-high heat. Add chicken breast pieces, season with kosher salt and black pepper, and cook for 5-7 minutes, stirring occasionally, until browned and cooked through.
- While the chicken cooks, prepare the couscous: Place instant couscous in a heatproof bowl, pour 1 1/2 cups boiling water over it, cover, and let sit for 5 minutes. Fluff with a fork.
- Reduce heat to medium-low in the skillet. Pour the peanut sauce over the chicken and simmer for 2-3 minutes, allowing the sauce to thicken slightly. Add the fresh spinach and cook until just wilted, about 1-2 minutes.
- Serve the peanut-lime chicken over the fluffed couscous. Garnish with chopped fresh cilantro, if desired.
Notes
