Paprika-Spiced Baked Chicken

  1. Preheat oven to 400 degrees F. Spread cubed sweet potatoes on a baking sheet, toss with 1 tablespoon olive oil, 1/4 teaspoon salt, and half the black pepper. Roast for 25 minutes until tender and caramelized.
  2. In a medium saucepan, bring brown lentils and water with 1/8 teaspoon salt to a boil. Reduce heat to low, cover, and simmer for 25 minutes until tender. Drain any remaining water.
  3. Rub the chicken cutlets with the remaining 1 tablespoon olive oil, sweet paprika, dried thyme, remaining 1/8 teaspoon salt, and remaining black pepper.
  4. Arrange the seasoned chicken cutlets in a single layer on a second parchment-lined baking sheet. Bake for 18 to 20 minutes until thoroughly cooked and reaching 165 degrees F internally.
  5. Spoon warm simmered lentils and roasted sweet potatoes onto plates, then rest the sliced paprika chicken cutlets over top before serving.

Notes

Brown lentils provide substantial structure and natural fiber without adding heavy saturated fat.
