  1. In a large bowl, whisk together all-purpose flour, eggs, milk, and 1/2 teaspoon salt until a smooth batter forms. Do not overmix; a few small lumps are okay.
  2. Heat 1/2 tablespoon vegetable oil in a large non-stick skillet or griddle over medium heat. Pour about 1/2 cup of batter into the skillet, tilting to coat the bottom evenly, forming a thin pancake.
  3. Immediately sprinkle about 1/4 of the diced deli ham and 1/4 cup of the shredded Gouda cheese over the wet batter.
  4. Cook for 2-3 minutes, or until the edges are set and the bottom is golden brown. Flip carefully and cook for another 1-2 minutes until the cheese is melted and the pancake is cooked through. Transfer to a plate and keep warm. Repeat with remaining batter and fillings, making 4 pannenkoeken in total.
  5. While pancakes cook, toss mixed green salad with bottled vinaigrette dressing in a small bowl.
  6. Serve the warm pannenkoeken immediately alongside the fresh mixed green salad.
