  1. Heat ghee in a large skillet over medium-high heat. Add paneer cubes and cook for 2-3 minutes per side until golden brown. Remove paneer from skillet and set aside.
  2. To the same skillet, add diced yellow onion and cook until softened, about 3-4 minutes. Stir in minced garlic and grated fresh ginger and cook for 1 minute more until fragrant.
  3. Add ground cumin, turmeric powder, garam masala, salt, and black pepper to the skillet. Cook, stirring constantly, for 30 seconds.
  4. Stir in fresh spinach and cook until wilted, about 2-3 minutes. Return the cooked paneer to the skillet and gently toss to combine with the spinach and spices.
  5. While the paneer mixture cooks, prepare the frozen cauliflower rice according to package directions, typically by microwaving or sautéing in a separate pan.
  6. Serve the Paneer and Spinach Skillet immediately over the prepared cauliflower rice. Garnish with fresh cilantro, if desired.

Notes
