Ingredients
- 7 piece white pita bread (refined white flour)
- 3 tablespoon mayonnaise
- 1.5 pound deli turkey breast (skinless, sliced thin)
- 14 slice Havarti cheese
- 2 tablespoon unsalted butter
Instructions
- Cut each white pita bread in half and carefully spread a thin coating of mayonnaise on the inside pocket surfaces.
- Layer each pita half with equal portions of sliced deli turkey breast and Havarti cheese slices, pressing gently to close.
- Melt 1 tablespoon unsalted butter in a wide nonstick skillet over medium-low heat.
- Place the stuffed pita halves in the skillet in batches, cooking for 3 minutes per side until the cheese is melted and the bread is golden, adding the remaining 1 tablespoon unsalted butter between batches.
- Transfer cooked sandwiches to a cutting board, let rest for 2 minutes, and pack into lunch containers.
Notes
Can also be packed cold without pan-toasting for an ultra-fast lunchbox option.
