- 1 tablespoon red wine vinegar
Instructions
- Pat sirloin steaks dry and season generously with 1/4 teaspoon salt and 1/8 teaspoon black pepper. Heat 1/2 tablespoon olive oil in a heavy-bottomed skillet (cast iron preferred) over medium-high heat until shimmering.
- Sear steaks for 3-5 minutes per side for medium-rare, or until desired doneness. Remove steaks from skillet and let rest on a cutting board.
- While steak rests, add remaining 1/2 tablespoon olive oil to the same skillet. Add sliced cremini mushrooms and cook for 3-5 minutes until browned and tender.
- Add riced cauliflower and chicken broth to the skillet with mushrooms. Cover and cook for 3-5 minutes, until cauliflower is tender. Remove from heat, mash thoroughly with a fork or potato masher, then stir in chopped fresh parsley and remaining 1/4 teaspoon salt and 1/8 teaspoon black pepper.
- In a small bowl, combine sliced cucumber, halved cherry tomatoes, thinly sliced red onion, and red wine vinegar to make a quick salad.
- Slice the rested steak against the grain. Serve the sliced steak with the herbed mushroom cauliflower mash and the simple salad.
Notes
Allowing the steak to rest for a few minutes after cooking is crucial for juiciness. If you prefer, a different tender cut of beef like flank steak can be used.
