  1. Pat the shrimp dry with paper towels. Season shrimp with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Set aside.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, or until pink and cooked through. Remove shrimp from the skillet and set aside.
  3. Add the remaining 1 tablespoon of olive oil to the same skillet. Add the minced garlic and red pepper flakes, cooking for 30 seconds until fragrant.
  4. Add the spiralized zucchini noodles to the skillet. Sauté for 3-5 minutes, tossing frequently, until they are tender-crisp.
  5. Pour in the low-sodium chicken broth and lemon juice. Bring to a simmer and cook for 1-2 minutes to slightly reduce.
  6. Return the cooked shrimp to the skillet with the zucchini noodles. Stir in the fresh parsley and lemon zest. Season with remaining 1/2 teaspoon salt and 1/4 teaspoon black pepper to taste. Toss gently to combine and serve immediately.

Notes

Patting shrimp dry is crucial for a good sear. Do not overcook the zucchini noodles; they should still have a slight bite.
