- 1.5 pound large shrimp (peeled and deveined)
- 3 tablespoon olive oil
- 4 clove garlic (minced)
- 4 zucchinis (medium, spiralized into noodles)

Instructions
- Pat the shrimp dry with paper towels. Season shrimp with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Set aside.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, or until pink and cooked through. Remove shrimp from the skillet and set aside.
- Add the remaining 1 tablespoon of olive oil to the same skillet. Add the minced garlic and red pepper flakes, cooking for 30 seconds until fragrant.
- Add the spiralized zucchini noodles to the skillet. Sauté for 3-5 minutes, tossing frequently, until they are tender-crisp.
- Pour in the low-sodium chicken broth and lemon juice. Bring to a simmer and cook for 1-2 minutes to slightly reduce.
- Return the cooked shrimp to the skillet with the zucchini noodles. Stir in the fresh parsley and lemon zest. Season with remaining 1/2 teaspoon salt and 1/4 teaspoon black pepper to taste. Toss gently to combine and serve immediately.
Notes
Patting shrimp dry is crucial for a good sear. Do not overcook the zucchini noodles; they should still have a slight bite.
