Instructions

  1. Pat salmon fillets dry with paper towels and season evenly with 1/4 teaspoon of the kosher salt and the black pepper.
  2. Heat 1/2 tablespoon of the olive oil in a large nonstick skillet over medium-high heat. Place salmon skin-side down and cook for 4 to 5 minutes until crispy. Flip and cook for an additional 3 to 4 minutes until opaque throughout and an internal temperature reaches 145°F. Transfer salmon to a warm plate.
  3. In the same skillet, add the remaining 1/2 tablespoon olive oil, green beans, and halved radishes. Sauté over medium heat for 5 to 6 minutes, stirring occasionally, until vegetables are tender-crisp.
  4. Whisk together the chicken broth, Dijon mustard, fresh tarragon, and remaining 1/4 teaspoon kosher salt. Pour into the skillet with the vegetables and toss for 1 minute until warmed through and lightly glazed.
  5. Divide the glazed vegetables among 3 plates, top each with a salmon fillet, drizzle pan juices over the top, and serve with lemon wedges.
