Instructions

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper.
  2. In a medium bowl, toss the broccoli florets with 1 tablespoon of olive oil, 1 minced garlic clove, 1/2 teaspoon of dried Italian seasoning, and 1/4 teaspoon of black pepper. Spread them in a single layer on the prepared baking sheet.
  3. Roast the broccoli for 10-15 minutes, or until tender-crisp and slightly charred.
  4. While the broccoli roasts, pat the salmon fillets dry with paper towels. Season both sides with the remaining 1/2 teaspoon dried Italian seasoning and 1/4 teaspoon black pepper.
  5. Heat the remaining 2 tablespoons of olive oil in a large non-stick skillet over medium-high heat. Once hot, place the salmon fillets skin-side down (if applicable).
  6. Sear the salmon for 4-6 minutes per side, depending on thickness, until cooked through and flaky. During the last minute of cooking, add the remaining minced garlic clove to the pan and let it become fragrant.
  7. Remove the salmon from the skillet and squeeze the juice from half a lemon over it. Serve immediately with the roasted lemon-herb broccoli and garnish with fresh lemon slices.

Notes

Ensure the salmon is fully thawed before cooking for even searing. Adjust cooking time based on the thickness of your fillets.
