Pan-Seared Salmon with Herb Butter

  1. Preheat your oven to 400°F. On a baking sheet, toss the asparagus with 1 tablespoon of olive oil, salt, and pepper. Roast for 10-12 minutes, until tender-crisp.
  2. While asparagus roasts, season salmon fillets with salt and pepper. Heat the remaining 1 tablespoon of olive oil in a large non-stick skillet over medium-high heat.
  3. Place salmon skin-side down in the hot skillet. Cook for 4-5 minutes, then flip and cook for another 3-4 minutes, or until cooked to your desired doneness and flaky.
  4. Remove salmon from skillet and set aside. In the same skillet, melt the unsalted butter. Stir in the chopped fresh parsley, chopped fresh dill, and lemon juice. Swirl for 30 seconds until fragrant.
  5. Prepare instant mashed potatoes according to package directions, using 1 cup milk and 2 tablespoons water, or to your desired consistency.
  6. Serve the Pan-Seared Salmon immediately, drizzled with the herb butter sauce, alongside the roasted asparagus and creamy mashed potatoes.

Notes

Ensure asparagus spears are thin for quick roasting. If thicker, they may need a few extra minutes. Avoid overcooking salmon to keep it moist.
