  1. Pat salmon fillets dry with paper towels and season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
  2. Heat 1 tablespoon of olive oil in a large non-stick skillet over medium-high heat. Once hot, add salmon fillets, skin-side up if present, and sear for 4-6 minutes per side, until cooked through and flaky. Remove salmon from skillet and set aside.
  3. Add the remaining 2 tablespoons of olive oil to the same skillet over medium heat. Add minced garlic and cook for 1 minute until fragrant.
  4. Add the chopped collard greens to the skillet. Cook, stirring frequently, until they begin to wilt, about 5 minutes.
  5. Pour in the apple cider vinegar and vegetable broth. Season with the remaining 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Bring to a simmer, then reduce heat to low, cover, and braise for 10-15 minutes, or until greens are tender.
  6. Serve the pan-seared salmon immediately with the braised collard greens.

Notes

If the collard greens are too bitter for the kids, you can blanch them briefly before braising to mellow the flavor. Leftovers are great reheated.
