- 8 ounce fresh green beans (trimmed)

Instructions
- Slice pork tenderloin into 1-inch thick medallions. In a shallow dish, sprinkle the pork medallions with 1 teaspoon ground cumin, 1/2 teaspoon dried oregano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper, rubbing to coat all sides. Set aside.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add diced sweet potato and cook, stirring occasionally, for 8-10 minutes, until tender and lightly browned. Season with 1/4 teaspoon salt and 1/8 teaspoon black pepper. Remove sweet potatoes from skillet and set aside.
- Add 1 tablespoon olive oil to the same skillet and increase heat to high. Add seasoned pork medallions and sear for 3-4 minutes per side, until golden brown and cooked through (internal temperature 145°F). Remove pork from skillet and let rest on a cutting board.
- Add 1 tablespoon olive oil to the skillet along with fresh green beans and minced garlic. Sauté for 4-6 minutes, until green beans are tender-crisp. Season with 1/4 teaspoon salt and 1/8 teaspoon black pepper.
- Serve pork medallions with pan-fried sweet potatoes and garlic green beans.
Notes
Cutting the sweet potato into small, uniform cubes helps them cook faster and more evenly. Avoid overcrowding the skillet when searing the pork to ensure a good sear.
