Ingredients
- 1.25 pound pork tenderloin (trimmed, cut into 1-inch thick medallions)
- 2 Gala apples (medium, cored and sliced into wedges)
- 12 ounce green beans (trimmed)
- 2 tablespoon olive oil
- 1 tablespoon butter
- 0.5 cup apple cider (100% pure)
- 1 teaspoon dried thyme
- 0.75 teaspoon salt
- 0.25 teaspoon black pepper (ground)
- 1 pound gold potatoes (baby, quartered)
Instructions
- Place quartered baby gold potatoes in a microwave-safe dish with 2 tablespoons water, cover, and microwave on high for 7 minutes until fork-tender; drain well.
- Season pork medallions with dried thyme, 1/2 teaspoon salt, and black pepper.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat, add pork medallions, and sear for 3 to 4 minutes per side until golden and internal temperature reads 145°F; transfer to a plate to rest.
- In the same skillet, add remaining 1 tablespoon olive oil, butter, sliced Gala apples, and trimmed green beans, and sauté for 4 minutes over medium heat.
- Pour in apple cider and remaining 1/4 teaspoon salt, scraping up any browned bits from the pan bottom, and simmer for 3 minutes until cider reduces slightly and beans are crisp-tender.
- Toss the steamed potatoes into the pan with the apples and glaze, return pork to skillet for 1 minute to warm through, and serve.
Notes
Pork tenderloin is best when cooked to medium (145°F) with a blush of pink to keep it tender and juicy.
