  1. Preheat the oven to 400 degrees F. Toss sweet potato wedges with 1 tablespoon of the olive oil, 1/2 teaspoon of the kosher salt, and 1/4 teaspoon of the black pepper; spread in an even layer on a baking sheet and roast for 25 minutes until tender and caramelized.
  2. Season both sides of the pork chops with the remaining 1/2 teaspoon salt and 1/4 teaspoon black pepper.
  3. Heat the remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Add the pork chops and sear for 4 to 5 minutes per side until golden brown and the internal temperature reaches 145 degrees F; transfer chops to a plate to rest for 5 minutes.
  4. Reduce skillet heat to medium, melt the unsalted butter, and add the sliced Gala apples, maple syrup, and ground cinnamon; sauté for 5 to 6 minutes until the apples are tender and lightly caramelized.
  5. Plate the rested pork chops topped with warm glazed apples and serve with roasted sweet potato wedges on the side.
