Ingredients
- 2 boneless pork chops (about 1 inch thick)
- 0.5 teaspoon kosher salt
- 0.25 teaspoon black pepper
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 yellow onion (medium, sliced)
- 1 apple (large, cored and sliced)
- 0.25 cup chicken broth
- 2 cup mashed potatoes (prepared)
- 1 cup green beans (frozen)
Instructions
- Season boneless pork chops evenly with 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper.
- Heat olive oil in a large skillet over medium-high heat. Add pork chops and sear for 4-6 minutes per side, until golden brown and cooked through (internal temperature 145°F). Remove chops from skillet and set aside on a plate to rest.
- Reduce heat to medium. Add butter to the same skillet. Add sliced yellow onion and sliced apple. Cook for 5-7 minutes, stirring occasionally, until apples and onions are tender and lightly caramelized.
- Pour in chicken broth and scrape up any browned bits from the bottom of the skillet. Bring to a simmer and cook for 2 minutes. Return pork chops to the skillet and spoon the apple-onion mixture over them.
- While the pork is cooking, prepare mashed potatoes according to package directions or reheat store-bought mashed potatoes. Steam frozen green beans according to package instructions.
- Serve the pork chops with the apple-onion topping, alongside mashed potatoes and green beans.
