Ingredients
- 4 pork chops (thin-cut, boneless)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 2 cup instant mashed potatoes (dry flakes)
- 2 cup water
- 0.5 cup milk
- 2 tablespoon butter
- 2 cup broccoli florets
Instructions
- Pat the pork chops dry with paper towels. Season both sides with 1 teaspoon garlic powder, 1 teaspoon onion powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Once hot, add the seasoned pork chops and sear for 3-5 minutes per side, or until golden brown and cooked through (internal temperature 145°F/63°C). Remove from skillet and set aside to rest.
- While the pork chops cook, prepare the instant mashed potatoes according to package directions. Typically, combine 2 cups instant mashed potatoes (dry flakes) with 2 cups water, 1/2 cup milk, and 2 tablespoons butter in a saucepan. Bring to a boil, then remove from heat, let stand for 1 minute, and fluff with a fork.
- Steam the broccoli florets until tender-crisp, about 3-5 minutes. This can be done in a steamer basket over simmering water or in the microwave with a splash of water in a covered bowl.
- Serve the pan-seared pork chops with the instant mashed potatoes and steamed broccoli.
Notes
Thin-cut pork chops are key for a truly quick meal. Don't overcook them or they'll dry out!
