  1. Pat pork chops dry and rub generously with Cajun seasoning on both sides.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat until shimmering.
  3. Place pork chops in the hot skillet. Sear for 4-6 minutes per side, or until golden brown and cooked through (internal temperature reaches 145°F). Remove chops from skillet and let rest on a plate.
  4. Add chopped fresh collard greens to the same skillet. Sauté for 2-3 minutes until they start to wilt.
  5. Stir in minced garlic and cook for 1 minute until fragrant.
  6. Pour in chicken broth and red wine vinegar. Season with 1/4 teaspoon salt, black pepper, and hot sauce (if using). Bring to a simmer, cover, and cook for 5-7 minutes, or until greens are tender.
