Ingredients
- 1 boneless pork chop (1-inch thick)
- 1 tablespoon olive oil
- 1 sweet potato (medium)
- 0.5 cup applesauce (unsweetened)
- 0.125 teaspoon cinnamon
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
Instructions
- Pat pork chop dry with paper towels. Season generously with 1/4 teaspoon salt and 1/8 teaspoon black pepper on both sides.
- Microwave the medium sweet potato: Pierce the skin several times with a fork. Microwave on high for 5 to 7 minutes, or until tender.
- While sweet potato cooks, heat 1 tablespoon olive oil in a medium skillet over medium-high heat until shimmering.
- Add pork chop to the hot skillet. Sear for 4 to 6 minutes per side, or until golden brown and internal temperature reaches 145°F. Remove from heat and let rest for 5 minutes.
- In a small bowl, combine 1/2 cup unsweetened applesauce with 1/8 teaspoon cinnamon.
- Slice the cooked sweet potato open and fluff with a fork. Season with remaining 1/4 teaspoon salt and 1/8 teaspoon black pepper to taste.
- Serve the rested pork chop with the warm sweet potato and cinnamon applesauce.
