  1. Pat pork chop dry with paper towels. Season generously with 1/4 teaspoon salt and 1/8 teaspoon black pepper on both sides.
  2. Microwave the medium sweet potato: Pierce the skin several times with a fork. Microwave on high for 5 to 7 minutes, or until tender.
  3. While sweet potato cooks, heat 1 tablespoon olive oil in a medium skillet over medium-high heat until shimmering.
  4. Add pork chop to the hot skillet. Sear for 4 to 6 minutes per side, or until golden brown and internal temperature reaches 145°F. Remove from heat and let rest for 5 minutes.
  5. In a small bowl, combine 1/2 cup unsweetened applesauce with 1/8 teaspoon cinnamon.
  6. Slice the cooked sweet potato open and fluff with a fork. Season with remaining 1/4 teaspoon salt and 1/8 teaspoon black pepper to taste.
  7. Serve the rested pork chop with the warm sweet potato and cinnamon applesauce.
