Instructions
- Season the pork medallions evenly with smoked paprika, cumin, chili powder, cayenne pepper, salt, and black pepper.
- Heat olive oil in a large skillet or wok over medium-high heat. Add the seasoned pork and sear for 2-3 minutes per side until nicely browned and cooked through. Remove pork from skillet and set aside.
- Add the diced yellow onion and red bell pepper to the same skillet. Sauté for 3-4 minutes until softened.
- Stir in the minced garlic and sauté for another minute until fragrant.
- Add the rinsed and drained black beans to the skillet, stirring to combine and heat through for 2-3 minutes.
- Return the cooked pork to the skillet along with the cooked quinoa and chopped fresh cilantro. Toss gently to combine all ingredients and heat through for 1-2 minutes.
- Taste and adjust seasoning as needed. Serve immediately.
