  1. Season the pork medallions evenly with smoked paprika, cumin, chili powder, cayenne pepper, salt, and black pepper.
  2. Heat olive oil in a large skillet or wok over medium-high heat. Add the seasoned pork and sear for 2-3 minutes per side until nicely browned and cooked through. Remove pork from skillet and set aside.
  3. Add the diced yellow onion and red bell pepper to the same skillet. Sauté for 3-4 minutes until softened.
  4. Stir in the minced garlic and sauté for another minute until fragrant.
  5. Add the rinsed and drained black beans to the skillet, stirring to combine and heat through for 2-3 minutes.
  6. Return the cooked pork to the skillet along with the cooked quinoa and chopped fresh cilantro. Toss gently to combine all ingredients and heat through for 1-2 minutes.
  7. Taste and adjust seasoning as needed. Serve immediately.
