Ingredients

- 2 tablespoon olive oil (extra virgin)
- 3 clove garlic (minced)
- 1 can black beans (rinsed and drained)

- 2 tablespoon lime juice (fresh)
- 0.25 cup fresh cilantro (chopped)
- 1 cup long grain white rice (uncooked)
- 2 cup water
- 1 teaspoon salt
- 0.5 teaspoon black pepper
Instructions
- Combine long grain white rice, 2 cups water, and 1/2 tsp salt in a saucepan; bring to a boil, cover, reduce heat to low, and cook for 15 minutes.
- In a medium bowl, toss black beans, sweet corn, diced red bell pepper, lime juice, fresh cilantro, and 1/4 tsp salt.
- Season mahi mahi fillets with 1/4 tsp salt and 1/2 tsp black pepper.
- Heat 2 tbsp olive oil in a large skillet over medium-high heat for 2 minutes. Add minced garlic and mahi mahi fillets, searing for 3 to 4 minutes per side until golden and cooked through.
- Serve seared mahi mahi alongside the black bean corn salad and warm white rice.
