Ingredients
- 1 pound baby potatoes (quartered)
- 1 tablespoon olive oil
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper (freshly ground)
- 12 ounce salmon fillets (skin on or off)
- 1 tablespoon fresh dill (chopped)
- 1 tablespoon lemon juice (freshly squeezed)
- 0.5 pound fresh asparagus (trimmed)
Instructions
- Preheat oven to 400°F. Toss 1 pound baby potatoes with 1/2 tablespoon olive oil, 1/4 teaspoon salt, and 1/8 teaspoon black pepper on a baking sheet. Roast for 20-25 minutes, or until tender and lightly browned.
- While potatoes roast, pat salmon fillets dry. Season with the remaining 1/4 teaspoon salt and 1/8 teaspoon black pepper.
- Heat the remaining 1/2 tablespoon olive oil in a large non-stick skillet over medium-high heat. Place salmon fillets skin-side down (if applicable) in the hot skillet. Sear for 4-5 minutes until the skin is crispy and golden. Flip and cook for another 3-5 minutes, or until the salmon is cooked through and flakes easily.
- During the last 5 minutes of salmon cooking, steam 1/2 pound fresh asparagus until tender-crisp, about 3-5 minutes.
- Remove salmon from heat and stir in 1 tablespoon chopped fresh dill and 1 tablespoon lemon juice. Serve the lemon herb salmon immediately with the roasted baby potatoes and steamed asparagus.
Notes
Ensure your salmon is fully defrosted before cooking for best results. This dish is best enjoyed fresh but leftovers are still good the next day.
