  2. Prepare instant mashed potatoes according to package directions, setting aside until serving.
  3. Heat olive oil in a large non-stick skillet over medium-high heat. Once hot, add the seasoned cod fillets. Cook for 4-5 minutes per side, or until the fish is opaque and flakes easily with a fork.
  4. While cod cooks, in a separate pan, melt butter over medium heat. Add minced garlic and cook for 30 seconds until fragrant. Add the frozen green beans and cook for 5-7 minutes, stirring occasionally, until tender-crisp. Season with a pinch of salt and black pepper.
