Ingredients
- 2 cod fillets
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- 0.5 teaspoon garlic powder
- 0.25 teaspoon black pepper
- 0.5 lemon (thinly sliced or juiced for serving)
- 1 package green beans (frozen)
- 1 tablespoon butter
- 1 clove garlic (minced)
- 1 cup instant mashed potato flakes
- 0.75 teaspoon salt
Instructions
- Pat cod fillets dry with paper towels. Season both sides with Italian seasoning, garlic powder, salt, and black pepper.
- Prepare instant mashed potatoes according to package directions, setting aside until serving.
- Heat olive oil in a large non-stick skillet over medium-high heat. Once hot, add the seasoned cod fillets. Cook for 4-5 minutes per side, or until the fish is opaque and flakes easily with a fork.
- While cod cooks, in a separate pan, melt butter over medium heat. Add minced garlic and cook for 30 seconds until fragrant. Add the frozen green beans and cook for 5-7 minutes, stirring occasionally, until tender-crisp. Season with a pinch of salt and black pepper.
- Serve the pan-seared cod with a lemon slice or a squeeze of fresh lemon juice, alongside the garlic green beans and instant mashed potatoes.
Notes
Ensure the skillet is hot before adding the fish to achieve a nice sear. Cook time may vary depending on the thickness of the cod fillets.
