  1. Combine 1/2 cup soy sauce, 1/4 cup honey, 2 tablespoons rice vinegar, 3 minced garlic cloves, 1 tablespoon grated fresh ginger, 1 teaspoon sesame oil, and optional 1/2 teaspoon red pepper flakes in a small bowl. Set aside.
  2. Cook 2 cups white rice according to package directions, adding 1 tablespoon fresh ginger coins to the cooking water for extra flavor. Once cooked, remove ginger coins.
  3. While the rice cooks, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Season the chicken pieces with salt and black pepper.
  4. Add chicken to the hot skillet and cook for 5-7 minutes, turning occasionally, until browned on all sides and cooked through.
  5. Pour the prepared honey garlic sauce over the chicken and bring to a simmer. Cook for 2-3 minutes, stirring, until the sauce thickens and coats the chicken.
  6. While the chicken simmers, steam 1 pound green beans until tender-crisp, about 5 minutes. Season with salt.
  7. Serve the pan-seared honey garlic chicken immediately over the ginger rice, with steamed green beans on the side.

Notes

Leftovers store well in an airtight container for up to 3 days. For spicier chicken, add more red pepper flakes to the sauce.
