Ingredients
- 1.5 pound chicken breast or thigh (boneless, skinless, cut into 1-inch pieces)
- 1 tablespoon olive oil
- 0.5 cup soy sauce
- 0.25 cup honey
- 2 tablespoon rice vinegar
- 3 clove garlic (minced)
- 2 tablespoon fresh ginger (grated and sliced into coins)
- 1 teaspoon sesame oil
- 0.5 teaspoon red pepper flakes
- 2 cup white rice (uncooked)
- 3 cup water
- 1 pound green beans (trimmed)
- 0.75 teaspoon salt
- 0.5 teaspoon black pepper
Instructions
- Combine 1/2 cup soy sauce, 1/4 cup honey, 2 tablespoons rice vinegar, 3 minced garlic cloves, 1 tablespoon grated fresh ginger, 1 teaspoon sesame oil, and optional 1/2 teaspoon red pepper flakes in a small bowl. Set aside.
- Cook 2 cups white rice according to package directions, adding 1 tablespoon fresh ginger coins to the cooking water for extra flavor. Once cooked, remove ginger coins.
- While the rice cooks, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Season the chicken pieces with salt and black pepper.
- Add chicken to the hot skillet and cook for 5-7 minutes, turning occasionally, until browned on all sides and cooked through.
- Pour the prepared honey garlic sauce over the chicken and bring to a simmer. Cook for 2-3 minutes, stirring, until the sauce thickens and coats the chicken.
- While the chicken simmers, steam 1 pound green beans until tender-crisp, about 5 minutes. Season with salt.
- Serve the pan-seared honey garlic chicken immediately over the ginger rice, with steamed green beans on the side.
Notes
Leftovers store well in an airtight container for up to 3 days. For spicier chicken, add more red pepper flakes to the sauce.
