Pan-Seared Halloumi & Roasted Green Beans

  1. Rinse the uncooked quinoa thoroughly under cold water. In a medium saucepan, combine the rinsed quinoa with low-FODMAP vegetable broth or water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until all liquid is absorbed. Fluff with a fork and set aside.
  2. Preheat your oven to 400 degrees Fahrenheit. On a sheet pan, toss the trimmed fresh green beans with 1/2 tablespoon of the olive oil, 1/4 teaspoon salt, and 1/8 teaspoon black pepper.
  3. Roast the green beans for 15-20 minutes, or until tender-crisp and lightly browned.
  4. While the green beans are roasting, heat the remaining 1/2 tablespoon olive oil in a large non-stick skillet over medium heat. Add the sliced halloumi cheese and dried oregano (and dried mint, if using).
  5. Sear the halloumi for 3-4 minutes per side, until golden brown and crispy.
  6. Divide the cooked quinoa among four plates. Top with roasted green beans and pan-seared halloumi. Serve with lemon wedges for squeezing over the dish.

Notes

While best fresh, roasted green beans and cooked quinoa store well. Halloumi can be reheated gently in a dry skillet or air fryer for a few minutes.
