Ingredients
- 14 ounce halloumi cheese (sliced 1/2-inch thick)
- 1 tablespoon olive oil
- 1 pound fresh green beans (trimmed)
- 0.5 teaspoon dried oregano
- 0.25 teaspoon dried mint
- 0.25 teaspoon salt
- 0.125 teaspoon black pepper
- 1 cup quinoa (uncooked)
- 2 cup low-FODMAP vegetable broth
- 1 lemon (cut into wedges)
Instructions
- Rinse the uncooked quinoa thoroughly under cold water. In a medium saucepan, combine the rinsed quinoa with low-FODMAP vegetable broth or water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until all liquid is absorbed. Fluff with a fork and set aside.
- Preheat your oven to 400 degrees Fahrenheit. On a sheet pan, toss the trimmed fresh green beans with 1/2 tablespoon of the olive oil, 1/4 teaspoon salt, and 1/8 teaspoon black pepper.
- Roast the green beans for 15-20 minutes, or until tender-crisp and lightly browned.
- While the green beans are roasting, heat the remaining 1/2 tablespoon olive oil in a large non-stick skillet over medium heat. Add the sliced halloumi cheese and dried oregano (and dried mint, if using).
- Sear the halloumi for 3-4 minutes per side, until golden brown and crispy.
- Divide the cooked quinoa among four plates. Top with roasted green beans and pan-seared halloumi. Serve with lemon wedges for squeezing over the dish.
Notes
While best fresh, roasted green beans and cooked quinoa store well. Halloumi can be reheated gently in a dry skillet or air fryer for a few minutes.
