Ingredients
- 8 ounce spaghetti
- 1 tablespoon olive oil
- 1 pound shrimp (peeled, deveined, tails on or off)
- 3.5 clove garlic (minced)
- 0.5 teaspoon red pepper flakes
- 1 pint cherry tomatoes (halved)
- 0.25 cup chicken broth
- 0.25 cup fresh parsley (chopped)
- 0.5 lemon (juiced)
- 0.75 teaspoon kosher salt
- 0.5 teaspoon black pepper
- 1 head romaine lettuce (chopped)
- 2 tablespoon Italian dressing
- 2 slice Italian bread
- 1 tablespoon butter (softened)
Instructions
- Cook spaghetti according to package directions until al dente. Reserve 1/4 cup pasta water before draining. Set aside.
- While pasta cooks, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the peeled shrimp and season with 1/4 teaspoon kosher salt and 1/4 teaspoon black pepper. Cook for 2-3 minutes per side until pink and opaque. Remove shrimp from skillet and set aside.
- To the same skillet, add the minced garlic and red pepper flakes. Cook for 30 seconds until fragrant. Add the halved cherry tomatoes and 1/2 teaspoon kosher salt. Cook for 5-7 minutes, stirring occasionally, until tomatoes soften and burst.
- Stir in the chicken broth and reserved pasta water, bringing to a gentle simmer. Add the cooked spaghetti, chopped fresh parsley, and lemon juice. Toss to combine.
- Return the cooked shrimp to the skillet and gently toss with the pasta. Season with remaining 1/4 teaspoon black pepper.
- Prepare garlic bread: in a small bowl, mix softened butter and 1/2 clove minced garlic. Spread on Italian bread slices and toast or broil until golden brown.
- Chop romaine lettuce and toss with Italian dressing for a simple green salad.
- Serve the pan-seared garlic shrimp pasta with the green salad and garlic bread.
Notes
Add some grated Parmesan cheese to the pasta for extra flavor, or a sprinkle of fresh basil for freshness. You can also use linguine or fettuccine instead of spaghetti.
