Instructions

  1. Cook spaghetti according to package directions until al dente. Reserve 1/4 cup pasta water before draining. Set aside.
  2. While pasta cooks, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the peeled shrimp and season with 1/4 teaspoon kosher salt and 1/4 teaspoon black pepper. Cook for 2-3 minutes per side until pink and opaque. Remove shrimp from skillet and set aside.
  3. To the same skillet, add the minced garlic and red pepper flakes. Cook for 30 seconds until fragrant. Add the halved cherry tomatoes and 1/2 teaspoon kosher salt. Cook for 5-7 minutes, stirring occasionally, until tomatoes soften and burst.
  4. Stir in the chicken broth and reserved pasta water, bringing to a gentle simmer. Add the cooked spaghetti, chopped fresh parsley, and lemon juice. Toss to combine.
  5. Return the cooked shrimp to the skillet and gently toss with the pasta. Season with remaining 1/4 teaspoon black pepper.
  6. Prepare garlic bread: in a small bowl, mix softened butter and 1/2 clove minced garlic. Spread on Italian bread slices and toast or broil until golden brown.
  7. Chop romaine lettuce and toss with Italian dressing for a simple green salad.
  8. Serve the pan-seared garlic shrimp pasta with the green salad and garlic bread.

Notes

Add some grated Parmesan cheese to the pasta for extra flavor, or a sprinkle of fresh basil for freshness. You can also use linguine or fettuccine instead of spaghetti.
