  1. Combine 1 1/2 cups jasmine rice, 1 can coconut milk, 1 cup water, and 1/4 teaspoon salt in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes until liquid is absorbed and rice is tender. Stir in the zest and juice of 1 lime after cooking.
  2. While rice cooks, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 3 cloves minced garlic and 1/2 teaspoon optional red pepper flakes; cook for 30 seconds until fragrant.
  3. Add 1 pound large shrimp and 1 cup fresh pineapple chunks to the skillet. Season with 1/4 teaspoon salt and 1/4 teaspoon black pepper. Cook for 3-5 minutes, stirring occasionally, until shrimp are pink and cooked through.
  4. Steam 12 ounces fresh broccoli florets until tender-crisp, about 5-7 minutes. You can do this in a microwave-safe bowl with a splash of water, covered, or in a steamer basket over simmering water.
  5. Serve the garlic shrimp and pineapple mixture over the coconut-lime rice, with steamed broccoli on the side.
