Ingredients
- 1.5 pound shrimp (peeled, deveined, tails removed)
- 8 ounce gluten-free penne pasta (uncooked)
- 3 cup broccoli florets (cut into bite-sized pieces)
- 1.5 tablespoon butter (unsalted)
- 1 tablespoon olive oil (extra virgin)
- 4 clove garlic (minced)
- 0.5 cup chicken broth (low-sodium)
- 2 tablespoon lemon juice (freshly squeezed)
- 0.75 teaspoon salt
- 0.25 teaspoon black pepper (ground)
- 2 tablespoon fresh flat-leaf parsley (chopped)
Instructions
- Cook the gluten-free penne in a large pot of boiling salted water according to package instructions (about 8 minutes). Add the broccoli florets during the final 3 minutes of boiling, then drain both together and reserve.
- Pat the shrimp dry and season with 1/4 teaspoon of the salt and the black pepper.
- Heat the olive oil and 1/2 tablespoon of butter in a large skillet over medium-high heat. Add the shrimp in a single layer and sear for 1 to 2 minutes per side until pink and opaque. Transfer shrimp to a plate.
- Reduce heat to medium, add minced garlic to the skillet, and cook for 30 seconds until fragrant. Pour in the chicken broth and lemon juice, simmering for 2 minutes to reduce slightly.
- Swirl in the remaining 1 tablespoon of butter and remaining 1/2 teaspoon of salt. Toss the drained pasta, broccoli, and seared shrimp into the sauce until glossy and coated.
- Garnish with chopped fresh flat-leaf parsley and serve immediately.
Notes
Shrimp cooks in just a couple minutes, so have all ingredients prepped beforehand.
