Pan-Seared Garlic Butter Shrimp

Plump shrimp quickly seared with garlic, lemon zest, and fresh herbs, served over gluten-free pasta with tender steamed broccoli.

  1. Cook the gluten-free penne in a large pot of boiling salted water according to package instructions (about 8 minutes). Add the broccoli florets during the final 3 minutes of boiling, then drain both together and reserve.
  2. Pat the shrimp dry and season with 1/4 teaspoon of the salt and the black pepper.
  3. Heat the olive oil and 1/2 tablespoon of butter in a large skillet over medium-high heat. Add the shrimp in a single layer and sear for 1 to 2 minutes per side until pink and opaque. Transfer shrimp to a plate.
  4. Reduce heat to medium, add minced garlic to the skillet, and cook for 30 seconds until fragrant. Pour in the chicken broth and lemon juice, simmering for 2 minutes to reduce slightly.
  5. Swirl in the remaining 1 tablespoon of butter and remaining 1/2 teaspoon of salt. Toss the drained pasta, broccoli, and seared shrimp into the sauce until glossy and coated.
  6. Garnish with chopped fresh flat-leaf parsley and serve immediately.

Notes

Shrimp cooks in just a couple minutes, so have all ingredients prepped beforehand.
