Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 1 pound diced chicken breast and cook until browned, about 5-7 minutes.
- Add 1 small diced yellow onion and 1 small diced green bell pepper to the skillet. Cook, stirring, until softened, about 5 minutes.
- Stir in 3 cups cooked white beans, 1 teaspoon dried sage, 1/2 teaspoon garlic powder, 1/2 teaspoon smoked paprika, and 1/4 cup water. Bring to a simmer.
- Stir in 4 cups fresh spinach until wilted, about 2-3 minutes.
