Pan-Seared Chicken with Lemon Herb Orzo

  1. Pound chicken breasts to even 1-inch thickness if necessary. Season with 1/2 teaspoon kosher salt, dried oregano, dried thyme, and black pepper.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-7 minutes per side, or until cooked through and golden brown. Remove chicken from skillet and set aside.
  3. While chicken cooks, bring chicken broth and remaining 1/2 teaspoon kosher salt to a boil in a medium pot. Add orzo pasta, reduce heat, and simmer for 8-10 minutes, or until al dente. Drain any excess liquid.
  4. Steam green beans until tender-crisp, about 5-7 minutes. You can do this in a microwave steamer or a pot with a steamer basket.
  5. To the cooked orzo, stir in lemon juice and chopped fresh parsley. Slice the cooked chicken breasts.
  6. Serve sliced chicken over lemon herb orzo, with steamed green beans on the side.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or a skillet.
