Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Season the chicken thighs with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
- Add the chicken thighs to the hot skillet and cook for 5-7 minutes per side, until deeply golden brown and cooked through. Remove chicken from skillet and set aside.
- Add the minced garlic to the skillet and cook for 30 seconds until fragrant. Pour in the chicken broth and lemon juice, scraping up any browned bits from the bottom of the pan. Bring to a simmer.
- Stir in the butter until melted, then return the chicken to the skillet, spooning the sauce over it. Toss with 1/4 cup fresh parsley.
- While the chicken cooks, steam the green beans until tender-crisp, about 3-5 minutes. Prepare the cooked quinoa according to package directions or use pre-cooked, reheating as necessary.
- Serve the pan-seared chicken with lemon-garlic sauce alongside the green beans and quinoa.
Notes
Using pre-cooked quinoa can save significant time. Fresh parsley adds brightness but can be omitted if you're in a rush.
