  1. Preheat oven to 400°F (200°C) or prepare a pan for roasting asparagus.
  2. Toss the asparagus with 0.5 tablespoon olive oil, a pinch of salt, and a pinch of black pepper. Spread on a baking sheet and roast for 10-12 minutes, or until tender-crisp.
  3. While asparagus roasts, pat the sirloin steak dry with paper towels. Season generously with salt and black pepper.
  4. In a small bowl, combine the softened unsalted butter, minced garlic, and chopped fresh parsley. If using, add finely minced shallot. Mix until well combined. This is your garlic herb butter.
  5. Heat the remaining 0.5 tablespoon olive oil in a heavy-bottomed skillet (cast iron works best) over medium-high heat until shimmering and almost smoking.
  6. Carefully place the seasoned sirloin steak in the hot skillet. For medium-rare, cook for 3-4 minutes per side. For medium, cook for 4-5 minutes per side. Adjust cooking time for desired doneness.
  7. For an optional pan sauce: If desired, remove sirloin steak from pan. Deglaze the skillet with dry red wine, scraping up any browned bits from the bottom. Simmer for 1-2 minutes until slightly reduced, then turn off heat.
  8. Transfer the cooked sirloin steak to a cutting board and immediately top each steak with a dollop of the garlic herb butter. Let the steaks rest for 5-7 minutes before slicing. This allows the juices to redistribute.

Notes
