Ingredients
- 1.5 pound salmon fillets (skinless, cut into 6 portions)
- 2 can canned black-eyed peas (rinsed and drained)
- 1.5 pound broccoli (cut into florets)
- 2 tablespoon avocado oil
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- 0.5 teaspoon salt
- 0.5 teaspoon black pepper (ground)
- 1 cup low-sodium vegetable broth
Instructions
- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- Arrange salmon fillets on the prepared baking sheet. Drizzle with 1 tablespoon of avocado oil and season evenly with 1/2 teaspoon dried thyme, 1/2 teaspoon smoked paprika, 1/4 teaspoon salt, and 1/4 teaspoon black pepper.
- Bake salmon in the oven for 12 to 14 minutes until the fish flakes easily with a fork and registers an internal temperature of 145°F.
- While salmon bakes, heat the remaining 1 tablespoon of avocado oil in a saucepan over medium heat. Add the rinsed black-eyed peas, remaining 1/2 teaspoon dried thyme, remaining 1/2 teaspoon smoked paprika, remaining 1/4 teaspoon salt, remaining 1/4 teaspoon black pepper, and 1 cup of low-sodium vegetable broth. Simmer for 8 minutes until warm and flavorful.
- Place broccoli florets in a steamer basket over boiling water and steam for 5 minutes until tender-crisp and bright green.
- Serve each portion of salmon alongside the warm stewed black-eyed peas and steamed broccoli.
Notes
Salmon is done when an instant-read thermometer registers 145°F.
