  1. Season the pork tenderloin medallions with dried oregano, black pepper, and 1/4 teaspoon of the salt.
  2. Heat 1/2 tablespoon of the olive oil in a large skillet over medium-high heat. Add the pork medallions and sear for 3 minutes per side until golden brown and the internal temperature reaches 145 degrees F. Transfer to a plate to rest.
  3. In the same skillet, add the remaining 1/2 tablespoon olive oil, green beans, and minced garlic. Sauté for 5 to 6 minutes until blistered and crisp-tender.
  4. Stir in the lemon juice and remaining 1/4 teaspoon salt with the green beans, scraping up any browned bits from the pan. Serve the warm green beans alongside the pork medallions.

Notes

Letting pork tenderloin rest for 3 to 5 minutes keeps the meat juicy and tender.
