Ingredients
- 0.5 pound pork tenderloin (sliced into medallions)
- 1 tablespoon olive oil
- 1 clove garlic (minced)
- 0.5 teaspoon dried oregano
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper (ground)
- 1 cup fresh green beans (trimmed)
- 1 tablespoon lemon juice (freshly squeezed)
Instructions
- Season the pork tenderloin medallions with dried oregano, black pepper, and 1/4 teaspoon of the salt.
- Heat 1/2 tablespoon of the olive oil in a large skillet over medium-high heat. Add the pork medallions and sear for 3 minutes per side until golden brown and the internal temperature reaches 145 degrees F. Transfer to a plate to rest.
- In the same skillet, add the remaining 1/2 tablespoon olive oil, green beans, and minced garlic. Sauté for 5 to 6 minutes until blistered and crisp-tender.
- Stir in the lemon juice and remaining 1/4 teaspoon salt with the green beans, scraping up any browned bits from the pan. Serve the warm green beans alongside the pork medallions.
Notes
Letting pork tenderloin rest for 3 to 5 minutes keeps the meat juicy and tender.
