Instructions
- Preheat oven to 425°F. On a baking sheet, toss the quartered red potatoes with 1/2 tablespoon olive oil, fresh rosemary, 1/4 teaspoon kosher salt, and a pinch of black pepper. Roast for 20-25 minutes, or until tender and lightly browned.
- While potatoes roast, pat pork chops dry. Season both sides of the pork chops with remaining 1/4 teaspoon kosher salt, remaining black pepper, and dried Italian seasoning.
- Heat remaining 1/2 tablespoon olive oil in a large skillet over medium-high heat. Add pork chops and cook for 4-5 minutes per side, or until internal temperature reaches 145°F.
- Steam the fresh green beans for 5-7 minutes, until tender-crisp.
- Serve the pan-fried pork chops immediately with the roasted herbed potatoes and steamed green beans.
