Ingredients
- 1 package halloumi cheese (drained, patted dry, sliced into 1/2-inch thick pieces)
- 1 tablespoon olive oil
- 1 pint cherry tomato
- 0.5 teaspoon dried oregano
- 0.25 teaspoon salt
- 0.25 teaspoon black pepper (freshly ground)
- 2 cup fresh arugula
- 1 tablespoon lemon juice (freshly squeezed)
- 2 whole pita bread
Instructions
- Preheat your oven's broiler to high. Line a small baking sheet with foil.
- On the prepared baking sheet, toss the cherry tomatoes with 1/2 tablespoon olive oil, dried oregano, 1/8 teaspoon salt, and 1/8 teaspoon black pepper. Broil for 7-10 minutes, or until the tomatoes are softened and slightly charred, shaking the pan once. Watch carefully to prevent burning.
- While the tomatoes broil, heat the remaining 1/2 tablespoon olive oil in a large non-stick skillet over medium heat. Add the sliced halloumi cheese in a single layer and pan-fry for 2-3 minutes per side, or until golden brown and crispy.
- In a medium bowl, combine the fresh arugula with 1 tablespoon fresh lemon juice, the remaining 1/8 teaspoon salt, and 1/8 teaspoon black pepper. Toss gently to coat.
- Warm the pita breads in a toaster or directly over a flame for about 30 seconds until soft.
- Divide the arugula salad between two plates. Top with the pan-fried halloumi and roasted cherry tomatoes. Serve immediately with the warm pita bread.
Notes
Halloumi can become rubbery if overcooked, so fry it just until golden brown. You can substitute spinach for arugula if preferred.
