Instructions

  1. Pat the boneless, skinless chicken breast dry. Slice each chicken breast horizontally to create thinner cutlets, about 1/2-inch thick. Season the chicken cutlets on both sides with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
  2. In a small bowl, combine the minced garlic and juice from half the lemon. Set aside.
  3. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken cutlets and pan-fry for 3-4 minutes per side, or until golden brown and cooked through (internal temperature reaches 165°F or 74°C). Remove chicken from skillet and keep warm.
  4. Add the remaining 1 tablespoon of olive oil to the same skillet. Add the trimmed fresh green beans and sauté for 5-7 minutes, until tender-crisp. Season with 1/4 teaspoon of salt and 1/4 teaspoon of black pepper.
  5. Pour the garlic-lemon mixture over the green beans and cook for 1 minute more, stirring, allowing the flavors to meld. Be careful not to overcook the beans to avoid a slimy texture.
  6. Serve the pan-fried chicken cutlets alongside the sautéed garlic-lemon green beans. Garnish with fresh parsley and lemon slices if desired.

Notes

Cooking chicken cutlets rather than whole breasts speeds up cooking time significantly. Adjust garlic and lemon to your taste preferences.
