  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mash the 3 1/2 cups cooked black beans until mostly smooth but still with some texture. You can use a potato masher or fork.
  3. To the mashed black beans, add the 1 cup fresh corn kernels, 1/2 cup finely diced bell pepper, 1/2 cup finely diced yellow onion, 4 minced cloves garlic, 1/2 cup gluten-free breadcrumbs, 1 tablespoon ground cumin, 1 teaspoon smoked paprika, 1/2 teaspoon black pepper, and the juice from the 1 lemon. Mix well until everything is thoroughly combined.
  4. Form the mixture into 8 evenly sized patties (about 1/2 cup each) and place them on the prepared baking sheet.
  5. Bake for 12-15 minutes, flipping halfway through, until the patties are heated through and lightly crispy.
  6. While patties bake, arrange the 2 sliced cucumbers and 2 cups carrot sticks on plates.
  7. Serve the hot black bean and corn patties alongside the fresh cucumber and carrot sticks.
