Oregano-Seasoned Chicken with Orzo and Tomatoes

  1. Season chicken breast pieces with 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1/2 teaspoon dried oregano. Heat olive oil in a large skillet or Dutch oven over medium-high heat and sear chicken for 4 to 5 minutes until lightly browned. Remove chicken and set aside.
  2. In the same skillet over medium heat, sauté yellow onion, garlic, and diced zucchini for 3 minutes until lightly softened.
  3. Add uncooked orzo pasta, remaining 1 teaspoon dried oregano, and remaining 1/4 teaspoon salt to the pan, stirring for 1 minute to toast the pasta lightly.
  4. Pour in canned diced tomatoes with juice and chicken broth. Bring to a simmer, return browned chicken to the skillet, cover, and cook over medium-low heat for 9 to 10 minutes, stirring occasionally, until orzo is tender and chicken reaches an internal temperature of 165 degrees F.
  5. Remove from heat, let rest uncovered for 2 minutes to thicken slightly, and serve warm directly from the skillet.

Notes

Stir the orzo a couple of times while simmering to prevent it from sticking to the bottom of the pan.
