  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add diced red potatoes and cook for 15-18 minutes, stirring occasionally, until tender and browned. Season with salt and black pepper to taste. Remove from skillet and set aside.
  2. While potatoes cook, in a medium bowl, whisk together the eggs, water or dairy-free milk, salt, and black pepper. Set aside.
  3. In the same skillet (no need to clean), add 1 tablespoon olive oil over medium heat. Sauté finely diced yellow onion and minced garlic for 3 minutes until softened.
  4. Stir in dried oregano, diced cooked ham, and drained diced tomatoes. Cook for 2-3 minutes.
  5. Pour the egg mixture into the skillet. Let set for about 30 seconds, then gently scramble with a spatula until cooked through but still moist, about 3-5 minutes.
  6. In a small bowl, combine halved cherry tomatoes, halved Kalamata olives, 1 tablespoon olive oil, and lemon juice. Season with salt and black pepper to taste.
  7. Serve the oregano and garlic eggs immediately with the pan-fried potatoes and the cherry tomato and olive salad on the side.
