  1. Preheat oven to 400°F. Line a baking sheet with parchment paper for easy cleanup.
  2. In a small bowl, whisk together 1/2 cup orange juice, 2 tablespoons soy sauce, 1 tablespoon honey, 1 teaspoon grated fresh ginger, and 1 minced garlic clove to make the glaze.
  3. Place 6 salmon fillets on the prepared baking sheet. Pour about half of the orange glaze over the salmon. Arrange 1 pound trimmed asparagus on the same baking sheet, drizzle with 1 tablespoon olive oil, and season with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
  4. Bake for 12-15 minutes, or until salmon is cooked through and flakes easily with a fork, and asparagus is tender-crisp.
  5. While salmon bakes, prepare the instant mashed potatoes according to package directions, using milk and butter as specified.
  6. Once salmon is cooked, drizzle the remaining glaze over the fillets before serving. Serve the orange glazed salmon with instant mashed potatoes and roasted asparagus.

Notes

For best flavor, avoid overcooking the salmon. The internal temperature should reach 145°F. You can also cook the asparagus on a separate smaller tray if preferred.
