  1. Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
  2. Stir in the yellow onion, garlic, and red bell pepper. Cook until softened, about 5 minutes.
  3. Add chili powder, ground cumin, salt, and black pepper. Stir well to coat the turkey and vegetables, cooking for 1 minute until fragrant.
  4. Pour in the diced tomatoes, black beans, corn, chicken broth, and uncooked white rice. Stir to combine.
  5. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes, or until the rice is tender and most of the liquid has been absorbed.
  6. Remove from heat, sprinkle the shredded cheddar cheese over the top, and cover the skillet for 5 minutes, allowing the cheese to melt.
  7. Garnish with fresh cilantro, if desired, before serving.

Notes

Leftovers store well in an airtight container for up to 3 days. Reheat gently on the stovetop or in the microwave.
