Ingredients
- 1 tablespoon olive oil
- 1.5 pound ground turkey (93% lean)
- 1 yellow onion (medium, diced)
- 2 clove garlic (minced)
- 1 red bell pepper (diced)
- 1.5 teaspoon chili powder
- 1 teaspoon ground cumin
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 1 can diced tomatoes (14.5 ounce, undrained)
- 1 can black beans (15 ounce, rinsed and drained)
- 1 can corn (15 ounce, drained)
- 2 cup chicken broth
- 1.5 cup white rice (uncooked)
- 1.5 cup cheddar cheese (shredded)
- 0.25 cup fresh cilantro (chopped)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
- Stir in the yellow onion, garlic, and red bell pepper. Cook until softened, about 5 minutes.
- Add chili powder, ground cumin, salt, and black pepper. Stir well to coat the turkey and vegetables, cooking for 1 minute until fragrant.
- Pour in the diced tomatoes, black beans, corn, chicken broth, and uncooked white rice. Stir to combine.
- Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes, or until the rice is tender and most of the liquid has been absorbed.
- Remove from heat, sprinkle the shredded cheddar cheese over the top, and cover the skillet for 5 minutes, allowing the cheese to melt.
- Garnish with fresh cilantro, if desired, before serving.
Notes
Leftovers store well in an airtight container for up to 3 days. Reheat gently on the stovetop or in the microwave.
