Instructions

  1. Cook fettuccine pasta according to package directions until al dente. Drain and set aside.
  2. Heat 1 tablespoon olive oil in a large skillet or Dutch oven over medium-high heat. Add the chicken breast pieces and cook, stirring occasionally, until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. Reduce heat to medium. Add the minced garlic to the skillet and cook for 1 minute until fragrant. Pour in the chicken broth, heavy cream, and milk, stirring to combine.
  4. Bring the sauce to a gentle simmer, then reduce heat to low. Stir in 1 cup freshly grated Parmesan cheese, dried Italian seasoning, and ground nutmeg until the cheese is melted and the sauce is smooth. Taste and season with salt and black pepper as needed.
  5. Return the cooked chicken and pasta to the skillet with the Alfredo sauce. Toss to coat everything evenly. Heat through for 2-3 minutes.
  6. Serve immediately, garnished with additional Parmesan cheese and fresh parsley, if desired.

Notes

For a thicker sauce, you can simmer it uncovered for a few extra minutes before adding the pasta. This dish is rich and comforting, perfect for a cooler evening.
